Bread with smoked & chimichurri butter
Warm sourdough bread served with smoked butter and chimichurri butter.​

Olive spherification with anchovy
A playful one-bite olive filled with anchovy essence.

Chilled avocado gazpacho
Smooth avocado gazpacho with tomato water, cucumber and lemon-thyme oil.

Cannelloni of avocado, lobster & chipotle
Light cannelloni with avocado, lobster and a touch of smoky chipotle.

Tiradito with ají amarillo & kumquat
Thin slices of amberjack (sashimi) in a citrusy leche de tigre with yellow chili and kumquat.

Lomo saltado gyozas
Dumplings filled with Peruvian-style beef and served with ají amarillo cream.

Foie gras coca with leek compote & chives
Crisp coca topped with foie gras, sweet leek compote and chives.

Iberian pluma with roasted peppers & gratin 
Charcoal-grilled Iberian pluma paired with roasted peppers and gratin potatoes.

Passion fruit, mint & coconut
A refreshing combination of passion fruit, mint and coconut.

Seasonal tart with cinnamon & caramel
Apple tart in spiral form served with cinnamon and caramel ice cream.

Red Rover

Aged, 12 months in barrel. Elegant with hints of spices and berries.
